It’s the pulp left over from pressing olives during olive oil production. It contains water, pulp, and a small amount of oil.

It is used as fuel by being turned into pellets. Its combustion temperature is high (e.g., ~5000kcal/kg) and its ash and sulfur content are low. 2kg of dried olive pomace is equivalent to ≈1kg of fuel oil.

Animal feed:
It is considered a roughage additive due to its pulp content.

Fertilizer & soil conditioner:
Pellet ash is rich in potassium oxide and can be used in agriculture as compost or fertilizer.
It can improve soil structure by providing a carbon source in the soil, but when used directly, it can cause nitrogen fixation. Therefore, composting is recommended.

Soap making:
It was historically used as a raw material for pulp oil in soap production.
